I made this cake for my mum's birthday. She LOVES coconut and I wanted to surprise her with something truly scrumptious, that we've never had before.
I couldn't find a recipe for this that was simple enough (I hate faff), so I made my own.
Serves 10
Ingredients:
175g butter/margarine
175g caster sugar
3 medium eggs
175g self raising flour
2 tbsp desiccated coconut
2 tbsp milk
Icing:
170g butter
340g icing sugar
1 tsp vanilla extract
2 limes (zest both and use juice of half a lime)
Desiccated coconut
Method:
Heat oven to fan 160
Grease x2 20cm round tins with margarine
Whisk butter and sugar together, until light and fluffy then beat in the eggs
Fold in the flour and coconut (figure of 8 with your spoon to keep the air)
Is your mixture of dropping consistency? If not, fold in 1-2 tbsps of milk
Divide the mixture between the x2 round tins and bake for 25-30 mins, until a knife comes out clear
Leave to cool before decorating
For the icing, mix the butter, icing sugar and vanilla extract together and squeeze in the juice of half a lime for a zingy flavour
Ice the top of one cake and place the other cake on top, then ice the top of that cake too. Sprinkle as much desiccated coconut on top of the cake as you fancy, and press some into the sides of the icing in the middle
I grated lime zest on the top of my cake too - just for a pop of colour! Make the cake your own.
