These chocolate chip cookies are insanely good, and slightly cakey. Before lockdown, I made these when we had visitors, and they asked to take some home with them. They're THAT good. Throw in whatever chocolate you have lying around, and you won't regret it. I put some pieces of Chocolate Orange on top of mine, when they were nearing the end of baking. I didn't plan on posting these as its a very simple recipe, so please forgive the only (poor) picture I took from a video of mine.
Makes 12 cookies
Ingredients:
120g butter/margarine
75g caster sugar
75g light brown sugar
1 egg
180g plain flour
1 tsp vanilla extract
1/2 tsp bicarbonate of soda
Bag of chocolate chips (I used milk chocolate)
Terry's Chocolate Orange (for decoration)
Method:
Heat oven to fan 160
Put two sheets of baking paper on two trays
Whisk the butter, sugar, eggs and vanilla extract together
Stir in the flour, bicarbonate of soda and chocolate chips
Spoon 12 lumps of mixture out on to the trays - little balls are fine as the cookies will flatten, so give them a bit of room to grow!
Bake for 10-12 mins - do not over cook them - they will harden up a bit once they cool down (after about 10 mins in the oven I added my chocolate orange to some of them and baked a few mins more)
